Key Lime Pie

Preparation time: 20 minutes
Serves: 8
Serving Size: 1 slice

• 1 3/4 cups graham cracker crumbs
• 4 Tbsp 60% vegetable oil spread (such as Olivio)
• 3 eggs, separated
• 1 12 -oz can fat-free (skim) evaporated milk
• 1 Tbsp cornstarch
• 1/3 cup sugar
• 1/3 cup fresh key lime juice
• 3 drops green food coloring
• 1/4 cup sugar

Preheat the oven to 350 degree F. Combine the graham cracker crumbs and vegetable oil spread in a medium bowl and cut to mix. Press into a 9-inch pie pan and bake for 7-10 minutes or until brown.

Combine egg yolks, milk cornstarch, and 1/3 cup sugar in a saucepan. Cook over medium heat, bringing the mixture to a boil. Remove from the heat and add the lime juice and the food coloring. Pour the mixture into the crust. Beat the egg whites with a mixer until peaks form. Add 1/4 cup sugar and beat until stiff.

Spoon the meringue over the filling and bake until the edges are lightly brown, about 15 minutes. Cool before serving.
