Orange Sweet Potatoes

Preparation time: 20 minutes
Serves: 8
Serving Size: 1/2 cup

• 5 medium oranges, unpeeled
• 1/3 cup brown sugar
• 1/2 cup brandy
• 1/4 cup fat free (skim) evaporated milk
• 2 Tbsp reduced-fat margarine
• 1/2 tsp salt
• 4 cups cooked, mashed sweet potatoes
• Dash of nutmeg

Grate the peel from one orange. Cut the remaining oranges in half. Scoop out the pulp to yield 2 cups of drained fruit and save the shells.

Cut a thin slice from the bottom of each orange shell to make it sit flat. Sprinkle the orange pulp with brown sugar and set aside.

Heat the oven to 350 degrees F. In a medium saucepan, heat the brandy, evaporated milk, margarine, and salt. Add to the sweet potatoes and mix well.

Stuff each of the orange shells with _ cup of the sweet potato mixture. Sprinkle each shell with grated orange peel. Bake for 30 minutes. Garnish with a dash of nutmeg.
