Sweet Potato Mash

Preparation time: 20 minutes
Serves: 18
Serving Size: 1/3 cup

• 5 lbs. sweet potatoes
• 3/4 cup evaporated nonfat milk
• 3 Tbsp light, soft, tub margarine
• 1/2 tsp salt
• 1/2 tsp cinnamon
• 1/4 tsp nutmeg
• Nonstick cooking spray
• 1/2 cup Splenda® Brown Sugar Blend
• 1/4 cup chopped pecans

Boil or bake the sweet potatoes until soft. While sweet potatoes are still hot, peel them and mash.

Combine all ingredients in a large bowl, except the Splenda® and pecans. Pour the mixture into an 11 x 7- inch baking dish sprayed with nonstick cooking spray. Sprinkle the Splenda® and pecans on top. Broil for a few minutes until sugar melts. Remove from heat and let stand.
